S'mores Skillet Cookie

Use our Soft-Baked Oatmeal Cookie Mix as a base for this favorite skillet cookie.

  • 1 bag Soft-Baked Oatmeal Cookie Mix
  • 1/2 cup melted butter or oil
  • 1/2 cup milk dairy or non-dairy
  • 2 eggs lightly beaten
  • 1/2 cup chocolate chips, divided
  • 4 graham crackers, crushed and divided
  • 1 cup mini marshmallows


  1. Preheat the oven to 350 degrees (F).

  2. Lightly grease an 8-inch cast-iron or another oven-proof pan

  3. In a large bowl, stir together the cookie mix and melted butter or oil

  4. Stir in the milk and eggs until combined

  5. Fold in 1/2 the chocolate chips and 2 of the graham crackers

  6. Pour the batter into the prepared pan and spread into an even layer

  7. Sprinkle the marshmallows on top

  8. Bake for 20-25 minutes. The marshmallows will brown slightly; be sure they don't begin to burn

  9. Remove pan from the oven and sprinkle the remaining chocolate chips and graham crackers on top

  10. Serve warm or allow to cool to room temperature

  11. Store, covered, at room temperature for one day or in the fridge for up to 3 days
