Banana Bread French Toast

Here we’ve combined two of the best breakfast dishes ever – Banana Bread and French Toast. This is an especially delicious meal and full of good protein. If you make the bread a day ahead, you can whip up this French Toast in a jiffy.

  • 1 bag Classic Banana Bread Mix prepared as instructed on package
  • 4 large eggs
  • ½ cup milk dairy or non-dairy
  • ½ teaspoon vanilla extract
  • ¼ teaspoon ground nutmeg
  • Butter or oil for cooking


  1. Prepare the banana bread as instructed on the package. It should yield about 12 slices.
  2. In a large, shallow bowl, whisk together the eggs, milk, vanilla and nutmeg until combined.
  3. Grease a large skillet or griddle and heat to medium-high.
  4. Dip one slice at a time into the egg mixture and turn to coat. Do not soak the bread.
  5. Place each battered slice onto the hot skillet or griddle and cook about two minutes or until the egg has cooked on the underside of the bread.
  6. Flip and cook another two minutes until the egg is cooked.
  7. You can keep the slices in a warmed oven until all slices have been cooked.
  8. Serve warm with maple syrup, powdered sugar or another topping of choice.
  9. If you don’t eat all the slices, you can wrap the uneaten ones in foil and store in the fridge for up to two days. We recommend re-heating in a toaster oven or in a skillet on the stove.
