If you’ve never tried olive oil in baking, now is your chance! These Lemon Poppyseed Muffins are made with a lemon-fused olive oil. It adds major flavor, keeps the muffins moist and has awesome health benefits! A perfect way to start your day.

Lemon Poppyseed Muffins

Lemon Poppyseed Muffins made with lemon-fused olive oil, which adds excellent flavor, moisture and health benefits to your morning treat!

    lemon-fused olive oil
  • 3/4
    dairy or non-dairy
  • 3/4
    vanilla (or lemon) yogurt
    dairy or non-dairy
  • 2
    lemon zest
    from one medium lemon
  • 1
    Superfood Muffin Mix
  • 3
    poppy seeds


  1. Preheat the oven to 350 degrees (F).

  2. Line a 12-cup muffin tin with paper liners (or lightly grease).

  3. In a large bowl, whisk together the eggs, oil, milk, yogurt and zest until combined.

  4. Add the muffin mix and poppyseeds to the wet ingredients and stir until fully incorporated.

  5. Pour the batter into each muffin cup, filling almost to the top.

  6. Bake 22-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.

  7. Remove from the oven and allow to cool in the pan about 5 minutes, then move to a rack to cool completely.

  8. Muffins can be stored at room temperature for a day, then move to the fridge for another 4 days. They also freeze well and can be frozen up to three months.

Recipe Notes

Lemon-fused olive oil is sold in specialty food stores. If you can’t find it, add 2 Tbs. fresh lemon juice to the recipe.
